The class is offered in conjunction with the experts from Ingredion, a Hatchery Sponsor and partner, who has an on-site Idea lab at the Hatchery. This session will start by looking at current trends in Clean Label ingredients led by Jennifer Tracy, Global Senior Strategic Marketing Manager, Clean & Simple Ingredients. From there, Brian Nash, Senior Director of Sustainability will provide an overview of sustainability-related consumer trends related to food and beverage through the view of how a larger company views this increasingly important topic. The session will also look at some of the operational and supply chain initiatives that help enable sustainability label claims and how that can be translated for entrepreneurs. The session will wrap with a variety of sustainable and clean label prototypes prepared by Ingredion’s Hatchery resident Culinologist, Nelson Serrano-Bahri, that will show ways you can formulate with these ingredients for enhanced offerings to consumers.

About the Presenters:
Brian Nash, Senior Director, Sustainability at Ingredion
As the Senior Director of Sustainability, Brian is responsible for establishing the overall company strategy for Ingredion’s sustainability program, making certain that it is relevant to our needs by managing long-term risks and resonating with various stakeholder sustainability expectations. Brian chairs Ingredion’s global Sustainability Council, and leverages that council to provide oversight for programs such as sustainable sourcing, environmental conservation, social accountability, community engagement, and sustainability reporting. Brian has a Bachelor’s Degree in Chemistry from Indiana University and a Master’s Degree in Environmental Management from the University of Findlay. In 2015 he graduated from the University of Cambridge with a Master’s Degree in Sustainability Leadership. He currently serves as a global Ambassador for the Cambridge Institute for Sustainability Leadership, and an adjunct faculty member for Indiana University.

For the past twelve years, Jennifer has coupled her knowledge of market and consumer trends with commercialization insights to lead new product development for suppliers and manufacturers alike. Today, she leverages her business acumen and Ingredion’s proprietary research to provide strategic direction for regional growth initiatives and to lead global development of products that meet consumer demand for clean and simple labels. Jennifer holds a bachelor’s degree in Fine Arts from the Illinois Wesleyan University and an MBA with an emphasis in Marketing from Grand Canyon University.
